Chocolate Chip Oatmeal Cookies
*gluten and refined sugar free
1 cup oat flour
1 ½ cup oats
1 cup coconut sugar
½ tsp cinnamon (secret ingredient)
½ tsp baking soda
½ cup or 1 stick of grass fed butter
1 large egg
1 tsp pure vanilla extract
1 cup chocolate chips (enjoy life brand is my favorite)
Pinch of sea salt
These are the kind of cookies you can feel good about reaching for... and so can your kids! Made with simple ingredients, gluten-free, and refined sugar-free, they've become a staple in our house. I hope you enjoy and follow me on Instagram @tippyjane for more recipes!
Directions:
In a large bowl whisk together flour, oats, baking soda, and cinnamon and set aside.
Beat butter and sugar together with a mixer on medium to high speed.
Add in egg and vanilla extract, mix for 1 more minute scraping the bowl as you go.
Add the dry ingredients to the wet and mix for 1-2 minutes on a low speed.
Add in chocolate chips, roll into balls and line the baking sheet with parchment paper.
6. Top with sea salt and bake on 350 degrees for 12-16 minutes (every oven is different so continue to check).
Let cool for 10 minutes and enjoy a guilt free sweet treat!
